Essence of frying bacon

From across the table at a local restaurant, a friend pointed to my wrist and inquired, “How did you burn yourself?” “Frying bacon,” I said casually. The table grew quiet. “In a skillet?” another asked in disbelief. “Yes,” I said, furrowing my brow. “How do you fry bacon?” “In my microwave,” she said. “Nobody fries bacon in a pan anymore.” Then she realized her declaration and backed off. “Well, I guess they might but I don’t see why. You do have a microwave, don’t you?” she asked. That’s when I looked behind me to see if my dinosaur tail was there, bony plates and all. “Yes, I have a microwave,” I said, “and I realize you can fry bacon that way, but I’ve always cooked it on the stove top.” “It’s soooo much easier in the microwave,” she said. “I have a special microwave tray for frying bacon, but you don’t need that. You can just put some paper towels down,” she said with hand gestures, “lay the number of strips of bacon you want to cook on top and then cover them with paper towels. It takes no time to cook it or clean up afterwards either.” Read this story and more in your Weekend edition of The Ennis News. Be informed, subscribe today!
