Cotton is King

It may look like sweet cotton candy but picking its bolls has long been a labor intensive chore that has spanned centuries and races of all colors. Today in Texas the crop still reigns as King Cotton. Back in the early 1900’s through the 1930’s the top two counties in the USA in terms of growing and harvesting cotton were Ellis and Collin, though the latter is largely under concrete now. As for Ellis County, it has seen its share of successful and low yields, but, according to Chris Mathis, the manager of the Co-Op Gin in Avalon, this
